The gourmet restaurant "La Colombe", located in Hyères, offers Provencal cuisine rich in Mediterranean fragrances.

This gourmet restaurant is highly regarded by gourmands and guests alike. 

It has been mentioned by, among others, Gault Millau, Bottin Gourmand, and Champérard. In addition, it's been honored with a culinary prize by Quartet Veuve Clicquot.  


Three (3) set menus are on offer: "Sun", "Palms" and "Discovery".

The set menu known as the "Sun" features: bouillabaisse with egg and saffron or rabbit as its appetizer.

For the main meal, one’s choices are between filet au jus Provençal and wheel of polenta and confit beef juice in red wine.

The set menu known as the "Palmiers" features either pumpkin, smoked duck breast chips with roasted pistachios, or poultry with foie gras and sour cream as its appetizer.

For the main meal, choices are between either roasted fillet of red porgy with soubrassada or fish of the day. The second main meal choices are between either suckling pig, prepared at low firing temperature with reduced juice or meat of the day.

The "Discovery" menu consists of four (4) dishes prepared by the chef according to the whatever delicacies are brought in from the farmers market.

From the "Discovery" menu, we especially enjoyed the foie gras with exotic fruits, roasted fillet of red porgy with soubressade, the desserts, and the cold interlude of crushed ice and flavored syrups.

The house offers a special menu for special days such as Valentine's Day, Easter, Mother's Day, meals and Christmas Eve.

Gourmet Provencal Cuisine

The gourmet restaurant "Lou Marques" in Arles offers traditional style Provencal cuisine characterized by delicately prepared specialty dishes made from the finest seasonal ingredients with sweet scents of Provence.

The seasonal culinary creations are quite variable. Typically the menu includes dishes with Saint Jacques, sea urchins, red mullet, as well as smoked foie gras, roast piglet with toasted hazelnuts, duck breast, followed by deserts like apple fondant, caramelized cinnamon, emulsion caramel, and ice cream with gingerbread, coconut pearl, heart flowing with mango, soft pistachio, and exotic sorbet.

Among the dishes we enjoyed particularly are Oysters au gratin, marinated tuna, Camargue Sandre and the Papetons of eggplant and tomato confit.

The restaurant Castellaras is located in Fayence, about 15 km from Callian, atop a hill which affords visitors a beautiful view of the Fayence Valley and the Esterel Hills.

Notable for its fine cuisine, a friendly atmosphere, a beautiful dining room containing decorations from a local castle, and tables situated in the garden for meals during the summer months invariably makes one’s visit to this place memorable.


Alain Carro and Quentin Joplet offer their culinary creations in three set-menus: set-menu "Pleasures", set-menu "Delicacies", set-menu "25 Years of Sharing"; and they will be pleased to offer their recommendations about the best wines to accompany your meal.

The house offers its exceptional menu options daily year around, especially for holidays like Valentine's Day, Easter, Mother's Day, Christmas and New Year’s eves.

Open every day except Monday and Tuesday.

During July and August meals are served on Tuesday evenings. Closed during the period January 5th through March 26th.
