Gourmet Provencal Cuisine

The gourmet restaurant "La Colombe", located in Hyères, offers Provencal cuisine rich in Mediterranean fragrances.

This gourmet restaurant is highly regarded by gourmands and guests alike. 

It has been mentioned by, among others, Gault Millau, Bottin Gourmand, and Champérard. In addition, it's been honored with a culinary prize by Quartet Veuve Clicquot.  


Three (3) set menus are on offer: "Sun", "Palms" and "Discovery".

The set menu known as the "Sun" features: bouillabaisse with egg and saffron or rabbit as its appetizer.

For the main meal, one’s choices are between filet au jus Provençal and wheel of polenta and confit beef juice in red wine.

The set menu known as the "Palmiers" features either pumpkin, smoked duck breast chips with roasted pistachios, or poultry with foie gras and sour cream as its appetizer.

For the main meal, choices are between either roasted fillet of red porgy with soubrassada or fish of the day. The second main meal choices are between either suckling pig, prepared at low firing temperature with reduced juice or meat of the day.

The "Discovery" menu consists of four (4) dishes prepared by the chef according to the whatever delicacies are brought in from the farmers market.

From the "Discovery" menu, we especially enjoyed the foie gras with exotic fruits, roasted fillet of red porgy with soubressade, the desserts, and the cold interlude of crushed ice and flavored syrups.

The house offers a special menu for special days such as Valentine's Day, Easter, Mother's Day, meals and Christmas Eve.

The restaurant is open:

  • every day except Saturday lunch, Sunday evening, and Monday - September thru June
  • every day except Monday, Tuesday at noon, and Saturday - July thru August.
